Keto Mini Pigs in a Blanket

One of our favorite snack foods is these Keto Mini Pigs in a Blanket. Since we are currently eating a low carb lifestyle we were missing our old favorite of sausages wrapped in crescent dough. This is where the fathead dough comes in handy yet again! These are delicious and satisfied any craving for junk food we may have had. We ate these as a fun dinner one night with salads on the side but they are perfect appetizers for any gathering. I’m willing to bet if you don’t let your guests know that they are not eating a low carb version they would never know the difference.

Recipe Notes for Keto Mini Pigs in a Blanket

They sell a sugar-free bbq sauce at Walmart that I mix with regular mustard to make a tangy dipping sauce.

Here are the mats I used, Silicone Baking Mat – Set of 3  they are perfect. Nothing sticks to them and the bottoms still get nice and brown.

I buy this almond flour Bob’s Red Mill Super-Fine Gluten Free Almond Flour, 3 Pound.  I am really not into all the low carb fakeout flours and potions with almond flour being the exception.  It makes great muffins and this bag lasts a while.  I just bought my second bag and I am 3 months into this way of eating.

Mini Pigs in a Blanket “Low Carb Style”

A keto version of a childhood favorite!

Ingredients

  • 1 recipe fathead dough *link in notes
  • 1 12-14 oz pack mini sausages lowest carb count you can find
  • pinch garlic salt

Instructions

  • Preheat the oven to 425° Prepare the fathead dough through step 2 then dump on either parchment paper or a silicone mat. For this preparation I use the mat and use a piece of parchment paper to place over it and very gently spread the dough out with my hands using the parchment paper in between my hands and the dough. I spread it out from the middle applying gentle pressure and picking up the paper to move around if needed until it is all around the same thickness. Then take a pizza cutter and cut them into small pieces. They do not have to be perfect just large enough to wrap around a sausage.
  • Now pick up a piece of dough and wrap each sausage. Keep going until they are all wrapped. We had extra and just baked them as well, they make tasty little crackers.
  • Sprinkle them with garlic salt and place in the preheated oven. Bake them for 15 minutes. Check after 13 to make sure they do not burn. Enjoy!

For my ingredients it was 9.5 carbs per serving based on the recipe serving 4 as a meal.
