Jalapeno Popper Cauliflower Mash

Jalapenos, cream cheese, and cauliflower come together for a perfect side dish any night of the week. This Jalapeno Popper Cauliflower Mash is ready in about 10 minutes thanks to the help of a food processor. If you do not have one you could use an electric hand mixer or even a handheld food masher. This dish came about because jalapeno poppers are one of my favorite appetizers. But I hate taking the time to clean and scrape all the seeds out of the peppers. This easy side dish gives me all of the same flavors without having to do all of that. You could certainly make this with fresh steamed cauliflower however the grocery makes it so convenient and affordable with their $1.19 steam in the bag variety.

We just love this served with a simple baked chicken breast or grilled steak. I only used half of a pepper and the heat level was very mild. If you like your food really spicy you can add the whole pepper. Or leave the seeds and ribs in for an extra spicy option. Enjoy!

Jalapeno Popper Cauliflower Mash

Ingredients

  • 1 12 ounce bag frozen cauliflower Steam in bag type, I used Kroger brand
  • 2 ounces cream cheese
  • 1/2 cup cheddar cheese
  • 1 tablespoon sour cream
  • 1 tablespoon butter
  • 1/2 jalapeno seeded, add the whole thing if you like spicy. 1/2 makes it mild.
  • 2 tablespoons cream
  • salt and pepper

Instructions

  • Steam the cauliflower according to the directions on the bag. Add all the ingredients to a food processor except the salt and pepper. Blend on high, scrape down the sides, blend again until smooth.
  • Season with salt and pepper to taste. Transfer to a serving bowl and top with additional cheddar and jalapeno if desired.

Notes

Using my ingredients I came up with 2 net carbs/serving. Look at your labels to determine your actual count as brands differ in their nutritional value.
