The Cubano on Low Carb Buns

This recipe for The Cubano on Low Carb Buns filled a need I had while eating low carb. I have never been a baker, one glance at my recipe archives will show you that I am definitely more of a meat and veggies kind of girl. While I take great pride in my recipe collection, one thing I will gladly take some help in is the baking department. Deciding to go with a low carb lifestyle was a pretty easy lifestyle change for me since I love the above-mentioned meat and veggies. However, there was one thing missing…BREAD!!! The selection of low carb buns and bread at the grocery is pretty much nonexistent. Yes, there are some tortilla and lower-carb sandwich bread, but buns or muffins, forget about it.

I have been experimenting with different bread and bun recipes that I have found on Pinterest and this one is by far my favorite for a bun. These do not have that at all, they have a nutty, satisfying flavor. The buns are really filling. You could serve this with a salad but really I was only able to eat 3/4 of the sandwich before I was really full.  The buns were just as delicious toasted the next morning with some butter as they were as a bun for my sandwich. I am working on creating a bun that has a little bit of a lighter texture. Until that happens these are going to be my go-to.

What Kind of Pork for The Cubano on Low Carb Buns?

You have a few options when it comes to the pulled pork. The most inexpensive and preferred method is to buy a 7-9 pound pork shoulder. Slow roast it for hours and then freeze it in 1 pound packs for later use. I will be sharing my recipe for the delicious pulled pork shown below in the next week or so. Your other options are to buy a pound from a bbq shop or find something like this pulled pork from Kroger. Whatever way you get there I am telling you the combination of flavors in this sandwich is delicious! It has always been one of my favorites. I am so happy I can still enjoy the flavors while staying within the parameters of my low carb life!

The Cubano on Low Carb Buns

Ingredients

  • 1 recipe low carb buns *Find the link for them above and below
  • 1 lb ham I like thin sliced
  • 8 slices pickle dill
  • 12 ounces pulled pork leftover or bought from favorite bbq joint or grocery
  • 4 thick slices swiss cheese
  • mayo
  • mustard

Instructions

Sandwich

  • Preheat your oven to broil. Slice each bun and spread a little mayo and mustard on each cut side. Place them cut side up on a baking tray. On one half add the pickle slice, then ham, then cheese. On the other side place the pork. Broil, watching them until the cheese melts and browns and the pulled pork starts to get a few brown spots.
  • Remove from the oven and place the pulled pork side on top of the ham side and enjoy!
