Zucchini and Ham Zoodle Salad

Lunch around my house usually consists of clearing out bits and pieces of food not used in recipes and leftovers.  This Zucchini and Ham Zoodle Salad recipe came from doing just that.  This is an easy zoodle salad perfect for a lunch or light dinner. I had some goat cheese leftover from our wine and cheese night. Some deli ham,  and since I have a new love for zoodles I now always have zucchini in the fridge.  This recipe, start to finish, took less than 10 minutes, and I could not believe how delicious it was.

More Zoodles!

I think my next zoodle recipe will be something along the lines of an alfredo sauce. I have had a craving for that recently. As I said, I made this for a quick lunch. But I think it would be nice as a cold side dish for summer cookouts as well. For meals, I use 1 medium zucchini per person, for a side dish, I think I would use less, maybe 1 per every 2 people.  Have you embraced the zoodle trend yet? If so, what are some of your favorite ways to eat them? Check out this recipe for a spicy pork and zoodle bowl for dinner to make use out of your spiralizer!
