Cilantro Lime Rice

Ingredients
- 1 cup uncooked white rice
- 2 cups water
- 1.5 tablespoons butter
- 1 teaspoon salt
- 1/2 lime
- 2 tablespoons cilantro chopped
Instructions
- Place 1 cup of rice, 2 cups of water, 1/2 teaspoon of salt and 1 tablespoon of butter in a saucepan, bring to a boil. Cover and simmer over low heat for 13 minutes. This time can change depending on what brand of rice you use. I always cook it 2 minutes shy of the package instructions,
- Remove from the heat, leave it covered and let it sit for 5 minutes. Don’t skip this step! After 5 minutes remove the lid and add the juice of half a lime, cilantro, 1/2 tablespoon of butter, stir and fluff with a fork. Taste for seasoning, you may want to add another 1/2 teaspoon of salt depending on your taste.
