Cilantro Lime Rice

This Cilantro Lime Rice is a quick and easy side dish.  We serve it with tacos, burritos, soups, carnitas, grilled chicken, and so on.   Do not skip the step of letting it rest after it is done simmering.  What is a go-to side dish in your family?

Cilantro Lime Rice

An easy side dish to go with any bowl, taco, meat, or burrito

Ingredients

Instructions

  • Place 1 cup of rice, 2 cups of water, 1/2 teaspoon of salt and 1 tablespoon of butter in a saucepan, bring to a boil. Cover and simmer over low heat for 13 minutes. This time can change depending on what brand of rice you use. I always cook it 2 minutes shy of the package instructions,
  • Remove from the heat, leave it covered and let it sit for 5 minutes. Don’t skip this step! After 5 minutes remove the lid and add the juice of half a lime, cilantro, 1/2 tablespoon of butter, stir and fluff with a fork. Taste for seasoning, you may want to add another 1/2 teaspoon of salt depending on your taste.
