This Chicken, Swiss, and Slaw Sandwich is perfect for an elevated lunch or quick dinner. With a little love from the broiler and a few extra minutes, you can turn your boring lunch meat sandwich into something crave-worthy. I made this for lunch the day after I made Crispy Fish and Slaw for dinner.
I used a rustic sesame loaf from my local Kroger for the bread. Bread does not stay fresh for long, I usually buy a loaf, put it in a freezer bag, and pop it right into the freezer. Whenever I need a piece, I take what I need and place it in the toaster and lightly toast it. It comes out fine and will keep for at least a month. This way, you can have delicious sandwiches all the time. Not just the day or two after you buy a nice loaf of bread. If you did not have the slaw you could just make it without it and add lettuce and tomato after it comes out of the oven. Different, but still delicious. What are some ways you upgrade your sandwich?

Chicken, Swiss, and Slaw Sandwich
Equipment
- 1 Foil
Ingredients
- 2 slices bread sliced such as ciabatta, sesame, or italian
- 4 ounces deli chicken breast I used Cracker Barrel brand
- 2 slices swiss
- 1/2 cup coleslaw leftover*
- 1 tablespoon mayonnaise optional
Instructions
- Preheat your broiler and put a piece of foil on a cookie sheet for easy clean up. Use a toaster to lightly toast your bread. This can also be done under the broiler if you prefer.
- Place 1 piece of bread on the foil lined sheet. On the bread add the mayo, chicken, and cheese. Place this under the broiler reserving the other piece of bread for the top. Broil for a few minutes until the cheese is nice and melty, about 2 minutes.
- Top with your leftover coleslaw, remaining slice of bread, grab a napkin and dig in!
