Mini Caprese Salad Bites

These Mini Caprese Salad Bites are perfect if you are looking for a quick, easy, and healthy appetizer. Summer has kept me very busy with little time to make anything too involved. Over the month of July expect to see some quick and easy dishes coming your way!  

These bites are the perfect addition to any summer party or BBQ. This appetizer was a last-minute idea and the selection of cocktail skewers was limited at my grocer but these would look so cute on some of the fancier picks. I made the skewers the night before, placed them on the serving tray, covered and set in the fridge. If you do this wait until you are ready to serve to add the oil, salt, and pepper. Ciliegine fresh mozzarella is near all the fresh mozzarella in the specialty cheese section of your grocer. It is a strange coincidence that the amount in a pint of tomatoes was almost identical to the pieces of cheese.

I did have a few leftover tomatoes but no big deal. You could use them up in this recipe Stuffed Cajun Chicken and Veggie Hash or just eat them. I made these for an in-home LuLaRoe, LipSense, and Adornable.U party a few weeks back and they were a big hit.  Easy to eat and minimal mess. Enjoy!

Mini Caprese Salad Bites

Ingredients

  • 1 pint cherry tomatoes
  • 1 8 oz tub ciliegine fresh mozzarella
  • 1 bunch fresh basil
  • olive oil
  • coarse sea salt
  • cracked black pepper
  • cocktail picks

Instructions

  • Rinse the cherry tomatoes and cut in half any that are extremely large or too big to be bite size. One at a time place 1 tomato, a piece of basil leaf, and a mozzarella ball on each skewer. Place them on a platter. When they are all filled and you are ready to serve drizzle with olive oil and sprinkle with salt and pepper.

  1. Caprese salad is one of my favorite things in the world. It’s such a great idea to turn it into an appetizer! I will definitely give this a try this summer.

  2. first of all these are so cute, love the little idea of having caprese salad as bite size perfect for get togethers, movie nights or when i get together with friends for a games night.
