Herb Chicken Pasta Salad

I love chicken salad, pasta salad, and plain old regular salad.  Guess what, if you mash them all up in this Herb Chicken Pasta Salad the result is delicious!  Here is the perfect Chicken Pasta Salad Recipe. When I worked at a restaurant ( Pizzaria Uno) I always added some cooked ziti noodles in my Ceasar salad to bulk it up a bit. I really don’t know what took me so long to do this at home. Considering I stopped working there in 2011 you would think I would have thought of this earlier. Oh well, better late than never.  To save a few bucks buy a family pack of chicken and make a dish earlier in the week and cook the extra chicken so you have leftovers you can use instead of buying the rotisserie. Here is a recipe for broiled chicken thighs that will leave you with yummy leftovers for this recipe! I would love to hear if anyone else has some mashups they love.  Let me know in the comments!

Three Way Salad

Ingredients

  • 1 cup plain greek yogurt
  • 1/2 cup mayonnaise
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon dried dill
  • 2-3 tablespoons chives chopped
  • 8 ounces pasta half of a 1lb box, I used rotini
  • 1 rotisserie chicken removed from the bones and shredded/chopped or 2-3 cups of leftover chicken
  • 2 stalks celery chopped
  • 1 cucumber sliced in half moons
  • 8 cups mixed greens 1 prewashed plastic container from the grocer

Instructions

  • Prepare your pasta according to the package instructions. Drain and rinse with cool water. While the pasta is cooking you can make the dressing so it is ready to go and get your chicken ready by removing the meat from the bones and chopping up.
  • In a bowl large enough to hold all the chicken and pasta add the yogurt, mayo, 2 tablespoons water, vinegar, mustard, dill, chives, and 1 teaspoon of salt and whisk to combine. Add the chicken, pasta, and celery to the dressing. Mix well. Serve this over a bed of mixed greens with some chopped up cucumber around it.
