Chorizo Sausage Gravy and Biscuits

We made this Chorizo Sausage Gravy and Biscuits for breakfast today and it was so delicious I just had to share it as soon as possible.  I had a half-pound of chorizo in my freezer. It was purchased it from Fresh Thyme when it was on sale a few weeks ago.  I had no idea at the time what I was going to do with it, I was thinking maybe mix it with some ground beef for burgers but then this idea came to me.

 We love the original sausage biscuits and gravy but the addition of chorizo sausage makes it even more flavorful and delicious.  If you prefer the original by all means just use regular breakfast sausage. If you happen to come across a good deal on fresh chorizo buy some and give this recipe a try.  Some places do not carry bulk fresh chorizo, they only sell links. No big deal, just buy a few links cut them with a knife and take off the casing.

I have to be honest, I have never had good luck with making homemade biscuits. They have always ended up dense and looking more like a hockey puck than a light and fluffy biscuit. Someday I will perfect my technique. For now, I take the shortcut and buy frozen ones.  I prefer to buy the ones in the frozen section such as Grands Buttermilk. They turn out more authentic and homemade tasting than the refrigerated ones in the pop open container.  Plus you have the option of only making what you need. Put an egg or two over the top and breakfast is served.  We really enjoyed this for breakfast today. I hope you try it soon and love it as much as we do! Chorizo Sausage Gravy and Biscuits

Ingredients

  • 1 tablespoon oil
  • 1/2 pound fresh chorizo
  • 3 cups whole milk
  • 2 tablespoons flour
  • 1 teaspoon salt
  • cracked black pepper
  • 8 biscuits
  • 4-8 eggs
  • chives optional for garnish

Instructions

  • Prepare the biscuits according to package directions, Start these before you make the gravy.
  • In a large skillet over medium high heat add the oil and chorizo and break it up as you brown it for about 5 minutes. Make sure to cook it long enough brown it and get good color on it.
  • Add the flour to the sausage and stir to coat the meat, Slowly add 3 cups of milk, whisking as you add it. Bring this to a boil whisking constantly.
  • Reduce the heat to a simmer and simmer over low for about 15 minutes stirring often. Add the salt to taste and a hefty amount of black pepper, I did 10 grinds of my pepper mill.
  • As the gravy finishes prepare eggs to your liking, we like over easy. Then plate 2 sliced biscuits, gravy, and top with an egg or two. Enjoy!
