Paprika and Garlic Roasted Zucchini

This Paprika and Garlic Roasted Zucchini is a great summer side dish. The weather is still warm and the zucchini are still growing like crazy here in the Midwest. Even though I sent the kids off this morning for the first day of school it still feels like summer. We start school in mid-August, and it felt strange buying school clothes. like jeans and long sleeves in 90° weather. I know in just a few weeks there will be a chill in the air. But for now, I am going to enjoy the rest of the summer heat and use up all of this zucchini.

This is a really easy side dish to pair with any meat for a quick weeknight meal. Cut, Mix, Dump, Bake, easy peasy. I cooked my zucchini for 12 minutes as I like a little bit of firmness to them. My Mom, on the other hand, likes them cooked all the way and soft. Taste one at 12 minutes and either cook it longer for up to 20 minutes or take them out depending on your taste. Using a silicone mat, foil, or parchment makes for easy clean up which is always nice. I served this alongside our Bacon Wrapped Jalapeno Popper Chicken for a delicious low-carb dinner. Paprika and Garlic Roasted Zucchini

Ingredients

  • 11/2 -2 pounds zucchini cut in half lengthwise then into half moons,
  • 1 teaspoon paprika I used sweet hungarian
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 tablespoon extra-virgin olive oil

Instructions

  • Preheat your oven to 425°. In a mixing bowl add the zucchini, paprika, garlic powder,salt, and oil. Toss to combine and evenly distribute.
  • Place on a lined baking tray large enough to have all the zucchini in a single layer, not over lapping. Use 2 trays if you need to. Bake for 12-20 minutes depending on your taste. 12 minutes will give you firmer zucchini with some bite left to them and 20 will give you a softer veggie. There is no right way just your preference.
